One whole farmed trout per pack, 300–400g, already gutted and scaled at source. Trout has been a Western culinary staple since the 1960s for good reason — buttery, rich-flavoured flesh that’s firm and moist when cooked properly. The small size is perfect for single-portion mains or two sharing.

How to cook
- Whole-roast: 200°C for 18–22 minutes stuffed with lemon, garlic and herbs.
- Pan-fry: 4–5 minutes per side in butter, basting with garlic and lemon.
- BBQ: 5–7 minutes per side over medium-high heat.
- Smoked: brine and hot-smoke at home for a couple of hours.
- En papillote: wrap with lemon and dill, bake at 200°C for 15 minutes.
Pair with a chilled Pinot Grigio or English sparkling wine.
