A pack of 2 wild sea bass fillets, 300–350g each — line-caught from English waters. Wild sea bass commands a serious premium over farmed for good reason: firmer flesh, deeper flavour, the silvery-blue skin that crisps beautifully under high heat. The dinner-party fillet that needs nothing more than butter and lemon.
