A 300g net jar of samphire — the salty, crunchy salt-marsh plant that grows wild on British and European coasts. (It looks like seaweed but isn’t — samphire is a flowering plant.) Long associated with British coastal cookery, samphire is the classic accompaniment to fish, a gherkin-style condiment, or a salty garnish for salads and platters.
