How to cook
- Pan-fry: dust with seasoned flour, fry in oil over medium-high for 3 minutes per side.
- Bake: 200°C for 10–12 minutes with butter, lemon and herbs.
- Beer-battered: 180°C for 5–6 minutes — chip-shop style.
- Tray-bake: on top of cherry tomatoes and butter beans, 200°C for 18 minutes.
- Fish pies and fishcakes: poach gently in milk, flake into mash or béchamel.
Pair with a crisp Sauvignon Blanc or chilled Albariño.
