    Ingredients

    • 12 oz. white fish fillet (you may use cod, halibut, or pollock fillet)
    • salt and ground black pepper to taste
    • 3 dashes of cayenne pepper
    • 2 tablespoons corn starch
    • 2 tablespoons cooking oil
    • lemon wedges
    • For the Garlic Butter Sauce
    • 1/2 stick melted salted butter
    • 3 cloves minced garlic
    • 1/2 tablespoon lemon juice
    • 1 tablespoon chopped parsley

    Method

    • The fish pieces should be cut to a size that will allow them to cook quickly. Season the fish with black pepper, salt and cayenne pepper. Coat the fish with corn starch before cooking.

    • Mix the melted butter, garlic, and salt for the Garlic Butter Sauce. Then, set aside.

    • Heat a non-stick skillet on medium fire. Add 2 tablespoons of cooking oil to a pan and fry the fish in a single layer on both sides until they turn crispy and golden brown.
Use a wooden utensil like a spatula or tongs to gently turn the fish over. Handle it gently, and don’t break the fish.

    • Turn off the heat, remove the fish and drain on paper towels.

    • Transfer the fish to a serving dish, then coat the fish with garlic butter.

    • Serving Suggestions: A sprig of parsley can be placed on top of the plate before serving. Lemon wedges can be placed on the side of the plate.

And because this recipe has such simple, classic flavours, it’s easy to pair with any of your favourite sides, including, tossed green salad, roasted cauliflower, sauteed zucchini, or pasta salad.
