Sprats are the underrated British seaside fish: tiny, sweet, oily-rich, and at their best when treated simply. A staple of Latvian, Baltic and traditional British seaside cookery, with a flavour that’s genuinely unlike anything else in the sea.

How to cook sprats

  • Shallow-fry (the classic): dust with seasoned flour, fry in a shallow layer of hot oil for 2–3 minutes per side until crisp and golden.
  • Deep-fry: 180°C for 2–3 minutes until crisp.
  • Smoked sprats: the Latvian classic — oil-cured, smoked, eaten on rye.
  • Marinated: in oil with garlic and herbs, served on rye bread.
  • Pickled: Scandinavian-style with vinegar, onion and dill.

Serve with sea salt, a wedge of lemon and a glass of cold beer or chilled Riesling.
