How to cook
- Braised: simmer gently in olive oil, white wine, garlic and tomato for 45–60 minutes — the Mediterranean classic.
- Grilled (after pre-cooking): braise first, then char on a smoking grill for 60 seconds per side.
- Octopus salad: braise, slice, dress with olive oil, lemon, parsley and red onion.
- Stew: Greek-style with red wine, tomato and oregano.
Pair with a chilled Vermentino or a Greek Assyrtiko.
