What it does have is delicately sweet white flesh, perfect for simple grilling, pan-frying or sole meunière — a brilliantly versatile fish at a brilliant catering price.

How to cook lemon sole
Lemon sole rewards simplicity. Skip heavy sauces — let the flavour speak with butter, lemon and herbs.
- Sole meunière: dust in seasoned flour, fry in butter for 2–3 minutes each side, finish with capers, parsley and lemon.
- Pan-fry: 2–3 minutes per side in oil and butter over medium-high heat.
- Grilled: brush with butter, season, grill 3–4 minutes per side.
- Bake: 200°C for 10–12 minutes with white wine, butter and herbs.
- Butter-steamed (in parchment): 1 minute butter-down in a hot pan, then off heat to finish.
Pair with a chilled Sauvignon Blanc, Chenin Blanc or Pinot Grigio.
