The constant movement of mackerel in the wild makes their flesh more muscular and darker than other oily fish — meaty, richly flavoured, ideally suited to high-heat grilling and frying.

How to cook
- BBQ: gut, score the skin, grill 4–5 minutes per side over medium-high heat.
- Grill: 4 minutes per side under a hot grill.
- Pan-fry: dust with flour, fry in butter and oil over medium-high for 3–4 minutes per side.
- Bake whole: stuff with lemon and herbs, bake 200°C for 18–22 minutes.
Pair with a chilled Sauvignon Blanc, an English sparkling wine, or creamed horseradish on the side.
