How to cook
- Pan-sear: 3–4 minutes per side in butter and oil.
- Grill / BBQ: 4 minutes per side over medium-high heat.
- Curry: add at the end of the simmer for 4–5 minutes (steaks hold up).
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Tropical-style: with mango salsa, lime and coconut rice.
Pair with a chilled Riesling or a Sauvignon Blanc.
