A 1kg pack of farmed Nile Perch steaks — cut from the largest freshwater fish in Africa. Creamy, medium-firm flesh with light pink colour and a rich, complex flavour carrying tones of citrus and tropical fruit. Steaks hold their shape well in higher-heat preparations.

How to cook

  • Pan-sear: 3–4 minutes per side in butter and oil.
  • Grill / BBQ: 4 minutes per side over medium-high heat.
  • Curry: add at the end of the simmer for 4–5 minutes (steaks hold up).
  • Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
  • Tropical-style: with mango salsa, lime and coconut rice.

Pair with a chilled Riesling or a Sauvignon Blanc.
