How to cook whole red snapper
- Mediterranean roast: 200°C for 18–22 minutes stuffed with lemon, garlic, oregano and parsley.
- BBQ: score the skin, grill 6–7 minutes per side.
- Italian Livornese-style: braised with cherry tomatoes, capers, white wine, garlic and anchovy.
- Caribbean braise: in coconut and tomato with thyme, allspice and Scotch bonnet.
- Steamed (Asian-style): 12–15 minutes with ginger, soy and spring onion.
Pair with a chilled Riesling or a tropical-fruity Sauvignon Blanc.
