How to cook
- Beer-battered (the headline use): get your beer batter ready — 180°C for 5–6 minutes until golden and crisp.
- Pan-fry: dust with seasoned flour, fry in butter and oil for 3 minutes per side.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Kedgeree base: poach in milk, flake into curried rice with eggs and peas.
- Tray-bake: with chorizo, butter beans and tomato.
Serve with chunky chips, mushy peas, tartare sauce and a wedge of lemon. Pair with a cold pint of bitter or a chilled Picpoul.
