A 950–1050g pack of the finest haddock we’ve found. Not the cheapest, but genuine fish-and-chip-grade quality: wild-caught, skin-off, filleted and frozen on the boat to lock in texture and flavour. The right cut for serious beer-battered fish-and-chips at home, and a brilliant cleaner, sweeter alternative to cod for those who prefer haddock.

How to cook

  • Beer-battered (the headline use): get your beer batter ready — 180°C for 5–6 minutes until golden and crisp.
  • Pan-fry: dust with seasoned flour, fry in butter and oil for 3 minutes per side.
  • Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
  • Kedgeree base: poach in milk, flake into curried rice with eggs and peas.
  • Tray-bake: with chorizo, butter beans and tomato.

Serve with chunky chips, mushy peas, tartare sauce and a wedge of lemon. Pair with a cold pint of bitter or a chilled Picpoul.
