How to cook hake
Hake takes confidently to high heat. Pan-fry seasoned fillets in oil over medium-high for 3–4 minutes each side until the flesh is opaque and flakes easily with a fork. To bake, wrap with herbs and lemon in foil and oven-bake at 200°C for 18–20 minutes from defrosted.
For a Spanish-style centrepiece, serve with salsa verde, garlic and a crisp white wine. For something more elaborate, try wrapping each fillet in Parma ham before baking. As a direct alternative to cod, hake holds its own in everything from a quick midweek tray-bake to a dinner-party plate.
