How to cook herring milts
Cook just before serving — milts go rubbery if held too long in the pan. Watch for the roe to gently pop out from the side when ready.
- Pan-fry (the classic): lightly dust with seasoned flour, pan-fry in butter for 2–3 minutes per side until golden. Serve on toast with a squeeze of lemon.
- Breadcrumbed: flour-egg-breadcrumb, fry 1–2 minutes per side.
- Devilled: in butter with mustard and cayenne, served on toast.
- Sherry vinegar butter sauce: the modern chef-grade preparation.
Pair with a chilled English sparkling wine or a Manzanilla sherry.
