How to cook
- Pan-fry: 3 minutes skin-down (if skin-on) in butter and oil, flip for 1 minute.
- Bake en papillote: with butter, white wine, lemon and herbs at 200°C for 8–10 minutes.
- Butter-poach: in melted butter for 4–5 minutes — chef-grade tenderness.
- Grill: 3 minutes per side under a hot grill.
Pair with a chilled Chablis or a Burgundian Chardonnay.
