How to cook lobster meat
- Lobster rolls: warm gently in butter with chopped chives; pile into split brioche.
- Thermidor: in a brandy-cream-mustard sauce, glazed under the grill.
- Pan-sear: 1–2 minutes in butter and garlic; finish with parsley and lemon.
- Ravioli filling: with mascarpone, lemon zest and chives.
- Bisque or chowder: add at the end, just to warm through.
Pair with a chilled Chardonnay, a Viognier or Champagne.
