How to cook whole red mullet
- Whole-roast: 200°C for 18–22 minutes stuffed with lemon, herbs and olive oil.
- BBQ: grill 4 minutes per side over medium-high heat — the most authentic Mediterranean preparation.
- Pan-fry: 3–4 minutes per side in olive oil.
- En papillote: wrap with tomato, fennel, olives and oregano, bake at 200°C for 15–18 minutes.
Pair with a chilled rosé from Provence or a crisp Sauvignon Blanc.
