A 900g bag of wild-caught whole red mullet — 2 to 3 fish per pack. Classified as a round white fish, but with a kind of butteriness and rich sweetness you usually only find in shellfish. The Mediterranean’s most prized small fish, with pearlised iridescent skin and a flavour that’s both delicate and robust.

How to cook whole red mullet

  • Whole-roast: 200°C for 18–22 minutes stuffed with lemon, herbs and olive oil.
  • BBQ: grill 4 minutes per side over medium-high heat — the most authentic Mediterranean preparation.
  • Pan-fry: 3–4 minutes per side in olive oil.
  • En papillote: wrap with tomato, fennel, olives and oregano, bake at 200°C for 15–18 minutes.

Pair with a chilled rosé from Provence or a crisp Sauvignon Blanc.
