Smaller than the New Zealand green-lipped mussels we also stock, with a beautiful black or dark brown shell and meat that ranges from light brown to subtly pink. Best in a flavourful buttery sauce or as part of a paella or seafood pasta.

How to cook
- Moules mariniere: warm in white wine, garlic, shallots and parsley for 3–4 minutes; serve with bread and frites.
- Paella: arrange across the rice in the last 4–5 minutes.
- Pasta: toss through hot garlic-and-tomato linguine off the heat.
- Asian style: with chilli, ginger, soy and coriander.
- Cataplana: Portuguese-style with chorizo, white wine and tomatoes.
Pair with a chilled Muscadet, Picpoul or Albariño.
