How to cook
- Butterfly with garlic butter: split lengthwise, brush with garlic and parsley butter, grill flesh-up for 4–5 minutes.
- BBQ: 2–3 minutes per side over high heat shell-on.
- Pan-fry: 3–4 minutes total in butter and garlic.
- Paella centrepiece: arrange across the rice in the last 5 minutes.
Save the heads for prawn stock or bisque. Pair with a chilled Albariño or Spanish rosé.
