How to cook
- Pan-fry: 1–2 minutes per side in butter and garlic.
- Salads: defrost, pat dry, fold through Caesar or Mediterranean leaves.
- Fishcakes: chop and bind with potato and breadcrumb; pan-fry in butter.
- Pasta: tossed through hot garlic-and-chilli linguine in the last minute.
- Curry: add at the end of the simmer for 2–3 minutes only.
Pair with a chilled Sauvignon Blanc or an Albariño.
