How to cook
- Split lengthways down the back, brush with garlic-chilli butter, grill flesh-side up for 4–5 minutes
- BBQ: thread on skewers, grill 4–5 minutes per side over direct heat
- Pan-roast whole in olive oil and garlic for 3–4 minutes a side until shells turn bright orange
- Best as a centrepiece — serve heads-on for drama, with lemon and aioli
