    • 750g tomatoes
    • 1 tablespoon fresh basil, finely chopped
    • 1½ tablespoons white wine vinegar
    • 2 tablespoons olive oil
    • Rosemary
    • Salt and black pepper
    • 500g headless raw tiger prawns
    • 250g fresh tagliatelle
    • 3 cloves garlic, crushed
    • Fresh basil leaves, garnish


    • Cook pasta according to instructions on the package.

    • Chop the tomatoes, shred the basil and cut the prawns in half lengthways.

    • Dice and sauté the garlic and olive oil. Add the tomatoes, basil, white wine vinegar and prawns, and then season the mixture with rosemary, pepper and salt.

    • Cook for 10 minutes over very low heat, or until the tomatoes are soft and the juices have reduced.

    • Plate the pasta straight away.

    • Serving Suggestions: Serve the pasta with the sauce on top. Garnish with fresh basil leaves.
