Redfish is a light-coloured, sweet-flavoured cousin of the rockfish family, with a slightly flaky medium-firm texture that holds up beautifully through baking, pan-frying or steaming. A premium-quality wild fillet at an everyday price.

How to cook
- Pan-fry: dust with seasoned flour, fry in butter and oil over medium-high for 2–3 minutes per side.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Steam: 6–8 minutes with white wine, garlic and parsley.
- Asian style: steamed with ginger, soy and spring onion.
Pair with a chilled Picpoul de Pinet or an unoaked Chardonnay.
