One whole wild sea bass, line-caught off the coast of Newhaven in the English Channel, weighing 750g to 1kg. Gutted at source for easier preparation. Sea bass is the Mediterranean’s most celebrated table fish — moderately firm, moist, white flesh with a slightly salty character and beautiful silvery-blue skin. This size sits perfectly between the smaller 400–500g and larger 1.5kg+ packs — ideal for two diners or a generous main for one.
