How to cook sprats
- Shallow-fry (the classic): dust with seasoned flour, fry in a shallow layer of hot oil for 2–3 minutes per side until crisp and golden.
- Deep-fry: 180°C for 2–3 minutes until crisp.
- Smoked sprats: the Latvian classic — oil-cured, smoked, eaten on rye.
- Marinated: in oil with garlic and herbs, served on rye bread.
- Pickled: Scandinavian-style with vinegar, onion and dill.
Serve with sea salt, a wedge of lemon and a glass of cold beer or chilled Riesling.
