How to serve

  • Starter for two: arrange on a board with rye bread, butter, capers, lemon and dill.
  • Brunch: over scrambled eggs on sourdough, with crème fraîche and chives.
  • Salads: flake into a green salad with avocado, cucumber and a yoghurt-dill dressing.
  • Platter for entertaining: serve alongside cheeses, olives, pickles and oatcakes.
  • Pasta: stir flaked smoked fish through hot tagliatelle with crème fraîche and lemon zest.

The variety opens up several wine pairings — Chenin Blanc, Pinot Gris or Sauvignon Blanc all work, depending on which fish you reach for first.
