How to cook Wahoo / Kingfish steaks
Wahoo is firm and lean — it cooks fast and dries out fast. Don’t take it past medium. Marinate first in olive oil, lemon, garlic and oregano if you have an hour; otherwise season generously and pat dry before hitting the heat.
- Barbecue: grill over medium-high heat for 4–5 minutes per side, until the flesh just flakes with a fork.
- Griddle pan: sear in a little oil for 4 minutes per side, with a knob of butter at the end.
- Oven: roast at 200°C for 10–12 minutes from defrosted, with tomatoes, olives and herbs.
- Sashimi (advanced): Wahoo is also prized as sashimi when sourced sashimi-grade — slice ultra-thin against the grain.
Pair with a crisp white wine, a wedge of lemon and a side salad — or with a fruity rosé and grilled vegetables for a relaxed garden meal.
