How to cook lobster meat

  • Lobster rolls: warm gently in butter with chopped chives; pile into split brioche.
  • Thermidor: in a brandy-cream-mustard sauce, glazed under the grill.
  • Pan-sear: 1–2 minutes in butter and garlic; finish with parsley and lemon.
  • Ravioli filling: with mascarpone, lemon zest and chives.
  • Bisque or chowder: add at the end, just to warm through.

Pair with a chilled Chardonnay, a Viognier or Champagne.
