How to cook
- Defrost overnight in the fridge, pat dry
- Pan-fry in olive oil and garlic for 2–3 minutes per side — shells go bright orange
- BBQ on skewers brushed with chilli butter — 3 minutes a side over direct heat
- Bake in their shells with garlic, parsley and lemon at 200°C for 6–8 minutes
