How to cook small squid
Hot and fast or slow and braised — the in-between is what makes squid rubbery.
- Tempura: dip in cold tempura batter, deep-fry 90 seconds at 180°C.
- Calamaretti alla piastra: 60–90 seconds per side on a smoking-hot griddle.
- Stir-fry: 60 seconds in a hot wok with chilli, garlic and ginger.
- Stuffed & braised: stuff with breadcrumbs and herbs, simmer in tomato sauce for 45 minutes.
- Sashimi: slice raw, serve with soy and wasabi.
Pair with a chilled Vermentino or Albariño.
