How to serve

  • Cold: flake over toasted sourdough with cream cheese and a squeeze of lime.
  • Warm: brush with olive oil and warm under the grill or on the BBQ for 2–3 minutes per side.
  • Salads: flake into a warm new-potato salad with watercress and red onion.
  • Platter: cut into bite-sized pieces and serve alongside cheeses, olives and capers as a starter for entertaining.

Pair with a French Chenin Blanc or a chilled Picpoul de Pinet to balance the chilli heat.
