A 500–600g pack of wild cod roe — harvested in the intact sac and frozen at peak. Cod roe has been a Nordic delicacy since Viking times and remains a Scandinavian staple, with a fresh slightly-salty taste and a structure similar to other organ-meat delicacies. The right ingredient for proper homemade taramasalata, deep-fried roe-on-toast, or a serious Scandi breakfast spread.

How to use

  • Pan-fry: slice, lightly flour, fry in butter for 2–3 minutes per side; serve on toast with lemon.
  • Taramasalata (homemade): blend with soaked bread, garlic, lemon juice and olive oil; whip silky; chill before serving with pitta and crudités.
  • Deep-fried: slice, batter, deep-fry for a pub-style snack.
