How to cook Mahi-Mahi
The flesh holds moisture well, so Mahi-Mahi is forgiving of high-heat methods that flake other fish. Don’t take it past medium — the meat dries out fast once overcooked.
- Grill / BBQ: brush with oil and grill 4–5 minutes per side over medium-high heat for steak-like flavour and char.
- Oven: bake at 200°C for 10–12 minutes with lime, garlic and chilli for a tropical centrepiece.
- Pan-sear: 3–4 minutes per side in hot oil; finish with a knob of butter.
- Ceviche: dice into 1cm cubes and “cook” in lime juice with red onion, chilli and coriander for 30 minutes.
- Butter-poached: a delicate way to keep it tender — try Bradley’s classic recipe.
Pairs naturally with tropical flavours — mango salsa, lime-chilli butter, coconut rice — or serve simply with grilled vegetables and a Sauvignon Blanc.
