A 1kg resealable bag of wild-caught Mahi-Mahi fillets — approximately 5 fillets at 6–7 oz each. Mahi-Mahi (the Hawaiian word means “very strong”) is a tropical predator fish whose firm, meaty, bright-pink flesh holds its moisture beautifully under high heat — texture-wise closer to salmon or red snapper than to delicate white fish. A premium plate for a tropical-style centrepiece, and a brilliant value choice for a confident weeknight grill.

How to cook Mahi-Mahi

The flesh holds moisture well, so Mahi-Mahi is forgiving of high-heat methods that flake other fish. Don’t take it past medium — the meat dries out fast once overcooked.

  • Grill / BBQ: brush with oil and grill 4–5 minutes per side over medium-high heat for steak-like flavour and char.
  • Oven: bake at 200°C for 10–12 minutes with lime, garlic and chilli for a tropical centrepiece.
  • Pan-sear: 3–4 minutes per side in hot oil; finish with a knob of butter.
  • Ceviche: dice into 1cm cubes and “cook” in lime juice with red onion, chilli and coriander for 30 minutes.
  • Butter-poached: a delicate way to keep it tender — try Bradley’s classic recipe.

Pairs naturally with tropical flavours — mango salsa, lime-chilli butter, coconut rice — or serve simply with grilled vegetables and a Sauvignon Blanc.
