How to cook
- Boil: defrost in the fridge for 24 hours, plunge into heavily salted boiling water for 8–10 minutes until shell turns deep red
- Grill: split lengthways, brush with garlic-parsley butter, grill flesh-side up for 7–9 minutes
- Thermidor: par-boil, lift the meat, dice and return in mustard-cream sauce with gruyère, gratiné under a hot grill
- Serve with melted butter, lemon, brown bread and a chilled white — the simplest pleasures
