How to cook
- Pan-fry: 2 minutes skin-down in olive oil, flip for 1 minute.
- Grill: 2–3 minutes per side, brush with garlic butter.
- Pasta: sauté in olive oil with garlic, chilli and capers; toss through linguine with breadcrumbs.
- Salads: warm and flake over panzanella or Mediterranean leaves.
- Sandwiches: on sourdough with rocket and lemon.
Pair with a chilled Vinho Verde, Albariño or Picpoul de Pinet.
