Whole Poached Salmon 6/7 Lb 3kg
This salmon dish is an old favourite from our factory store, and it’s a whole salmon gutted and cooked with the skin on. Remove the skin while partly defrosted, add prawns and cucumber, form a mock skin, and lightly glaze with gelatine. Serves 20 as part of a buffet.
