How to dress and serve
- Defrost in the fridge for 36 hours on a platter to catch any liquor
- Carefully peel the top skin while still cold (it lifts cleanly), leave the head and tail intact
- Decorate with thin cucumber scales, lemon slices, dill and prawns
- Serve with mayonnaise, hollandaise or a herb-and-caper salsa verde
