How to cook
- Pan-fry: 1–2 minutes per side in butter and garlic.
- Stir-fry: add to the wok in the last 90 seconds.
- Paella: add to the rice in the last 5 minutes.
- Curry: add at the end of the simmer for 2–3 minutes.
- Soup or chowder: add at the very end to warm through.
Pair with a chilled Albariño, Sauvignon Blanc or a dry Riesling.
